OUR STORY

Originally built in 1956, The Buccaneer Marina and Resort has been an icon in Palm Beach Shores and has been called home by many local legends, including Ernest Hemingway.

As the marina and resort restoration nears completion, we are proud to announce the opening of our new restaurant, the Buccaneer Waterfront Grill, with Chef Paul Niedermann at the helm.

MEET CHEF
PAUL NIEDERMANN

Chef Paul Niedermann has always had a passion for cooking, a talent he inherited from his father, an Executive Chef himself. During high school, Chef Paul discovered that nothing ignited his enthusiasm like the time spent in the kitchen with his father and family, solidifying his career path.

With determination and passion, he enrolled at Johnson & Wales University in North Miami, Florida. During his time there, he worked his way up to a Chef de Partie position at the prestigious Biltmore Hotel in Coral Gables. After graduating with degrees in Culinary Arts and Culinary Management, he continued his journey as a Junior Sous Chef at the St. Regis Hotel.

In September 2012, Chef Paul gained national recognition as the Season 9 winner of Hell’s Kitchen on Fox TV. This victory led to his appointment as Head Chef at BLT Steak in New York City. Throughout his tenure with BLT Restaurant Group, he served as Chef de Cuisine at BLT Steak in Los Angeles and as Executive Chef at BLT Prime in Doral, Florida.

Chef Paul embraces a simplistic approach to modern cuisine, allowing seasonal ingredients to shine in an elegant yet approachable manner. He treats each guest at his restaurants as if they were in his own home, ensuring that no one leaves hungry.

Now residing in South Florida with his wife and family, Chef Paul enjoys fishing and playing golf when he’s not in the kitchen.

RESURRECTING A LEGEND

Established in 1956, the Buccaneer Marina has been at the heart of many local legends. After years of dedicated restoration, we have transformed the marina and resort back into the crown jewel it once was.

For over 70 years, the Buccaneer Marina has been known as the birthplace of sailfishing in South Florida. Our marina has proudly hosted a prestigious sailfishing tournament for more than 50 years and continues to grow and evolve. After working closely with the town of Palm Beach Shores to bring this historic destination back to life, we are now thrilled to invite you to join us as we open our doors and welcome the community back to the Buccaneer Marina and Resort.

We’d like to extend a special thank you to Palm Beach Shores Mayor Alan Fiers for his unwavering support and dedication. Without the commitment of our local community leaders, the restoration and revival of the Buccaneer Marina and Resort would not have been possible.
